Nie samym tiramisu żyje człowiek ;)

forma 35x25cm

Spód

250 g mąki
125 g cukru pudru
1 łyżeczka ekstraktu z wanilii
125 g masła
1 jajko
Z podanych składników zagnieść szybko ciasto (zrobiłam to ręcznie) - jeśli będzie zbyt wilgotne, należy podsypać je delikatnie mąką. Uformować kulę, zawinąć w folię i zostawić w lodówce na 40 minut.
Po wyjęciu wylepić formę ciastem i ponakłuwać widelcem. Podpiec w piekarniku ok. 10 - 15 minut w 180ºC. 

Masa

1 kg twarogu trzykrotnie mielonego (lub z wiaderka)
8 jajek
100 g miękkiego masła
250 g cukru pudru
3 łyżki cukru waniliowego
150 g małych rodzynek
Białka ubić na sztywną pianę, pod koniec ubijania dodając 50 g cukru pudru. Odstawić na bok.
Masło, 200 g cukru pudru oraz cukier waniliowy utrzeć razem na gładką masę. Następnie, miksując, dodawać po jednym żółtku i jednej łyżce sera - aż do skończenia składników.
Do masy dodać rodzynki oraz wmieszać łyżką pianę z białek.
Masę serową wylać na podpieczony spód i ponownie wstawić do piekarnika, tym razem na ok. 50 - 60 minut. Jeśli wierzch zacznie się przypiekać - najlepiej przykryć go folią. Wystudzone ciasto schłodzić w lodówce (najlepiej całą noc). 
Sernik jest raczej delikatny i nie chce się równo kroić, co widać na załączonych obrazkach ;)

Cheesecake
form 35x25cm

Bottom

250 g flour
125 g icing sugar
1 tsp vanilla extract
125 g butter
1 egg
Quickly mix all ingredients together (I made it by hand) - if the dough is too moist, add a bit of flour. Form a ball, wrap in a foil and leave in the fridge for 40 minutes. When ready, roll out and push it to form's bottom. Pinch all over with fork and put into to the oven for 10 - 15 minutes in 180ºC.
Cheese mixture

1 kg cheese (for cheesecake!) ;)
8 eggs
100 g soft butter
250 g icing sugar
3 tsp vanilla sugar
150 g small raisins

Egg whites to be beaten until stiff (adding 50 g icing sugar at the end) and set aside.
Butter, 200 icing sugar and vanilla sugar to be mixed together until smooth. Next, while mixing, add 1 egg yolk and 1 table spoon of cheese at a time (till these are finished).
Add raisins to the mixture and mix in (by spoon) the beaten egg whites.
Pour the cheese mixture onto the form and place back into the oven for another 50 - 60 minutes. If the top gets too brownish - best cover it with baking foil sheet. Leave to cool completely and place in the fridge (over night).

This cheesecake is very soft and delicate and it was impossible to cut it into perfectly measured pieces. But who cares, right? ;)
